Evolution of Milk Powder: From Early Innovations to Global Significance

The history of milk powder processing begins in the early 19th century, driven by the need for a stable, long-lasting form of milk. In 1802, Russian chemist Osip Krichevsky pioneered the first known method of drying milk. He discovered that by evaporating milk over low heat, it could be transformed into a powder that retained its nutritional value and could be easily reconstituted with water. This innovation laid the groundwork for future advancements in milk preservation.

In the mid-19th century, French scientist Nicolas Appert, renowned for his contributions to food preservation, refined the process further. Appert’s technique involved boiling milk to remove its water content and then drying the remaining solids. While innovative, this method was inefficient and produced a lower-quality product, limiting its widespread adoption.

The late 19th century marked a turning point with the invention of the spray drying method by American inventor Samuel R. Percy. Spray drying revolutionized milk powder production by introducing a highly efficient technique. Milk was sprayed as a fine mist into a chamber of hot air, where the water evaporated almost instantly, leaving behind fine, uniform particles of milk powder. This method significantly improved the product’s quality and scalability, making milk powder more practical for commercial use.

Advancements in technology throughout the 20th and 21st centuries have further optimized the milk powder production process. Modern spray drying facilities now incorporate sophisticated controls and energy-efficient systems, ensuring consistent product quality while minimizing environmental impact. Additional processes, such as instantization, have been developed to make milk powder more soluble in water, enhancing its usability.

Milk powder has become a critical component of the global food industry. It serves as a vital ingredient in infant formulas, dietary supplements, and an array of processed foods, including chocolates, bakery items, and beverages. Its long shelf life and ease of transport make it indispensable in regions with limited access to fresh milk or stable refrigeration.

Today, the global milk powder market continues to expand, driven by growing demand in developing economies and innovations in dairy technology. The product’s enduring relevance underscores its role in addressing food security challenges and supporting nutritional needs worldwide.

History of processing milk powder spray drying

In 1295, Marco Polo reported that Mongolians boiled milk, skimmed off the fat that rose to the top to make butter and dried the defatted milk in the sun.

Now, nearly all the powdered milk produced these days for human consumption is spray dried. In spray drying, concentrated milk is sprayed into hot air, whereas foam-spray drying sends jet of hot air into concentrated milk.

The patent of spray drying was registered in 1872 in the United States. Percy described the principle of spray drying and he is considered to be inventor of spray drying technology.

The first industrial spray drying was installed in 1905 for US company by the name of Merril Soul. Rapid development of dairy industries, due to increased production of milk after World War II, brought significant improvement of milk spray driers.

Spray drying became more established during the mid 1900s and the advantages over roller drying were immediately evident in terms of the less destructive nature of thermal treatments involved.

Many inventions in the following years improved the technology of concentrated and dried dairy products.

One significant innovation in drying technology, economy and quality of the powdered products was a two stage drying, that is the instantisation method.

The dairy industry is the major food sector utilizing the spray drying technique in order to meet the ever increasing demand of dried milk products.
