The Science and Tradition of Tea Fermentation

Tea fermentation is a fundamental process in the history and culture of tea production, shaping the distinct flavors, aromas, and colors of various tea types. Fermentation, commonly referred to as oxidation, is a biochemical transformation in which enzymes within the tea leaves interact with oxygen, breaking down polyphenols and producing complex flavor compounds. This intricate process differentiates black, oolong, and pu-erh teas from their unoxidized counterparts like green and white teas.

The origins of tea fermentation date back thousands of years to ancient China, where early tea farmers inadvertently discovered the effects of oxidation when tea leaves were left exposed to air. Over time, these accidental discoveries evolved into refined techniques for crafting distinct tea varieties. The Chinese classification system identifies teas based on their degree of fermentation: green tea (unfermented), oolong tea (partially fermented), black tea (fully fermented), and post-fermented teas like pu-erh, which undergo microbial aging.

During the Tang Dynasty (618-907 CE), controlled fermentation techniques were established, allowing for greater consistency in tea production. The Song Dynasty (960-1279 CE) saw a surge in tea culture, leading to the development of specialized methods such as the steaming and rolling of leaves to preserve desired characteristics. By the Ming (1368-1644 CE) and Qing (1644-1912 CE) dynasties, fermentation processes were further refined, and new varieties, including pu-erh, gained prominence.

Beyond China, fermentation techniques spread to Japan, Korea, and the West. Japanese tea culture adapted methods to produce unique teas like matcha and sencha, focusing on minimal oxidation. Meanwhile, Korean teas, such as hwangcha, developed their own fermentation traditions. European traders in the 17th century fueled the demand for black tea, leading to large-scale production and innovation in oxidation control.

Modern advancements in fermentation leverage scientific research to optimize tea processing. Controlled environments, temperature regulation, and microbial cultures are now used to enhance specific flavors and health benefits. Recent studies highlight the probiotic potential of post-fermented teas, supporting gut health and immunity.

Tea fermentation remains a dynamic field, blending centuries-old traditions with modern innovation. As global interest in specialty teas grows, ongoing research continues to refine fermentation techniques, ensuring the preservation and enhancement of tea’s diverse flavors and cultural significance.

Wine fermentation during ancient time

Winemaking is one of the most ancient of man’s technologies and is now one of the most commercially prosperous biotechnological processes.

Winemaking could have started by accident when natural yeast fermentation occurred in overripe grapes stored in a container. Historians believe that wine was being made in Caucasus and Mesopotamian as early as 6000 BC.

During Paleolithic time, in fermentation process, whole grape clusters are piled into vat and the accumulated weight of the grapes above crushed those below.

The free run juice then begins to ferment because of the natural yeast present, setting up an anaerobic, carbon dioxide-rich environment that triggers the whole grapes to alert their metabolism and to break down their sugar reserves into alcohol.

Wine was an everyday commodity to the ancient Egyptians, Greeks, Cretans, Romans, and the Mediterranean peoples several thousand years before Christ.

Improvements in the traditional method were handed down through generations.

The making of wine was practiced in the eastern Mediterranean long before the first Greek speakers arrived, circa 2100 BC.

The ancient author Pliny the Elder describes how the ancient Greeks used partly dehydrated gypsum before the fermentation of wine.

Pliny goes on to say that a type of lime was added to the wine after fermentation to reduce acidity.

Unlike modern winemakers, the Greeks could not halt the natural fermentation. Therefore, Greek wines had to be consumed within three or four years.

By the 500 BC the Greeks had perfected their wine production to the point where Greek wines were an important export item, prized throughout the Mediterranean.

Evidence suggest that the first wines produced from grapes were imported into Egypt from the eastern Mediterranean around 3150 BC, but within 200 years, Lower Egypt had a strong grape growing tradition and wine pressers appear in tomb paintings.

Yeasts are found naturally as white powder deposits on grape skins, so fermenting begins only hours after grapes are picked if any are crushed.

Some grapes were crushed by groups of workers treading on them with bare feet in large vats, while others were squeezed in a sack press.

The ancient Romans developed technology vastly to improve the creation and the preservation of wine. The use of barrels for fermentation, aging and transportation were also created during Roman’s time.

History of Fermentation

Mankind is practicizing fermentation since pre-historic times. This useful conventional technology has risen by accident.

During pre-historic times, women made learned the art of kaffir beer from their husband before they get marry.

The term fermentation is derived from the Latin verb ‘fervere’, to boil, which describes the appearance of the action of yeast on extracts of fruits or malted grain during the production of alcoholic beverages.

Sorghum grains or millet are germinated, sundried ground and mixed with sorghum, millet or maize flours and water, and then cooked, cooled and fermented by the residual yeast and the dregs in the containers.

The use of fermentation starts might very well have its origins in the process of Euchok, the daughter of the legendary king of Woo of 4000 BC, known as the Goddess of rice wine in Chinese culture.

Understanding of scientific procedure of fermentation microbiology began in 1850s, after Louis Pasteur, who has succeed in producing two forms of amyls alcohol by fermentation.

Between 1900 and 1930, ethyl alcohol and butyl alcohol are the most important industrial fermentations in the word. But by the 1960s, chemical synthesis of alcohol and other solvents were less expensive and interest in fermentations diminished.

It is often mentioned that today’s modern biotechnology originated from the alcohol fermentation of primitive peoples.

Nowadays, the development of genetic engineering has made it possible to use the process of fermentation for the production of many compounds including vaccines, antibiotics and enzymes and also for biological conversion of many substances.
